Borscht anyone?

  1. My fav way to eat beets is to toss them with olive oil and sea salt and roast them. And I love eating beet greens with homemade ranch dressing. Yum!

  2. I just had beets this morning. Delicious in a Juice Drink! For this sweet, high energy juice drink I juiced: (1)beet w/leaves, (8)sticks celery, (1)cup collard greens, (2)pears, (1)cup kale, & (1)cup dandelion greens.

  4. Well, I made lasagna with beet greens; sauteed beet greens with basalmic, pine nuts and raisins; and brownies with minced beet. Mom is pickling some of the beets for later.

    Kathy- I will definitely be making that juice. It sounds great. Waiting for my kale to get bigger, plus I gotta start harvesting my dandelion greens instead of just tossing them in the green can!
